Chicken quesadillas

These chicken and avocado quesadillas will be gobbled up by both the kids and adults.

Chicken quesadillas
  • 4 wholemeal tortillas
  • 80 gram reduced-fat cream cheese
  • 1 cup shredded cooked chicken
  • 1/2 cup coarsely chopped semi-dried tomatoes
  • 1 small avocado, peeled and mashed

    Place 2 wholemeal tortillas on a board; spread tortillas with cream cheese then top with chicken and tomatoes.

    Spread remaining 2 tortillas with mashed avocado; place, avocado-side down, on first tortillas. Toast, in batches, in a heated sandwich press until golden brown. Serve quesadilla cut into quarters.
