Chicken fajitas
  • 500 gram chicken breast stir-fry strips
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground chilli
  • 1/2 teaspoon smoked paprika
  • 2 tablespoon olive oil
  • 1 large red capsicum (bell pepper) (350g) sliced thinly
  • 1 large yellow capsicum (bell pepper) (350g), sliced thinly
  • 1 medium red onion (170g), sliced thinly
  • 1/4 cup fresh coriander (cilantro) leaves, coarsely chopped
  • 1/4 cup (60ml) water
  • 12 x 19cm flour tortillas
  • 1 cup (240g) sour cream
  • 1 lime, cut into wedges
  • 1/4 cup fresh coriander (cilantro) leaves, loosely packed

    Combine chicken, spices and half the oil in a large bowl, season.

    Heat remaining oil in a large frying pan, cook capsicum and onion, stirring, over high heat, for 5 minutes or until soft. Add chopped coriander, transfer to a medium bowl, cover to keep warm.

    Add chicken mixture to pan, cook, stirring, until browned and cooked through. Return capsicum mixture to pan with the water; cook, stirring, until hot. Season to taste.

    Meanwhile, heat tortillas in microwave according to directions on packet.

    Serve chicken mixture with tortillas, sour cream, lime wedges and coriander leaves.


If you'd like a little extra heat, increase the amount of chilli powder. You could also heat the tortillas on a grill plate, if you like. Spray the tortillas with a little oil first.
