Chicken, artichoke and lemon skewers
  • 3 lemons
  • 2 tablespoon olive oil
  • 1 garlic clove, crushed
  • 500 gram chicken thigh fillets, cut into 2cm pieces
  • 2 400g cans artichoke hearts drained, halved
  • green salad, to serve

    Cut two lemons into 8-12 wedges per lemon. Combine finely grated rind and juice of remaining lemon with oil and garlic in a small jug.

    Thread chicken pieces, artichoke halves and lemon wedges alternately onto skewers and place in a shallow bowl. Season well and pour over lemon mixture, turning to coat well.

    Spray a char-grill pan lightly with cooking oil spray and heat on medium. Cook chicken skewers for 10 minutes, turning regularly, until browned and chicken is cooked through.

    Serve skewers with green salad.
