Ingredients

Chicken and vegetable pasta
  • 500 gram packet spiral pasta
  • 2 tablespoon olive oil
  • 1 onion, sliced
  • 1 clove garlic, crushed
  • 250 gram chicken breast fillet, thinly sliced
  • 1 cup broccoli florets
  • 1 red capsicum, seeded, sliced
  • 1 zucchini, halved, sliced
  • 400 gram can diced tomatoes
  • 1/2 cup chicken stock
  • 1/2 cup roughly chopped basil leaves
  • 1/2 cup shaved fresh parmesan
  • crusty bread, to serve

Method

    Cook pasta in a large saucepan of boiling salted water, 10-12 minutes, following packet instructions. Drain and return to pan.

    Meanwhile, heat oil in a large frying pan on medium. Sauté onion and garlic, 2-3 minutes, until tender.

    Add chicken and cook, stirring, 2-3 minutes. Mix broccoli, capsicum and zucchini in with chicken. Cook, 2-3 minutes. Stir tomatoes and stock into mixture. Simmer, 4-5 minutes, until vegetables are tender.

    Toss sauce and basil through pasta in pan and season to taste. Top with parmesan. Serve pasta with crusty bread, if you like.
