Chicken and sweet corn bake

Chicken and sweet corn bake
  • 3 cup (480g) coarsely chopped barbecued chicken
  • 420 gram canned creamed corn
  • 1 1/2 cup (180g) coarsely grated cheddar
  • 1/2 cup (125ml) pouring cream
  • 4 green onions, sliced thinly
  • 1 cup (70g) stale breadcrumbs

    Preheat oven to 220°C.

    Combine chicken, corn, cheese, cream and onion in a large bowl; season. Spoon mixture into four oiled 1-cup (250ml) ovenproof dishes; sprinkle with breadcrumbs.

    Place dishes on an oven tray; bake for 20 minutes or until mixture is heated through and the top is browned lightly. Serve sprinkled with extra green onion, if you like.


Serve with a mixed green salad. You will need a large barbecued chicken to get the amount of shredded chicken required for this recipe.
