Chicken and spinach bake
  • 1 tablespoon olive oil
  • 1 large brown onion (200g), chopped finely
  • 2 clove garlic, crushed
  • 10 instant lasagne sheets (200g)
  • 1 1/2 cup (240g) shredded barbecue chicken
  • 1 cup (100g) pizza cheese
  • 3 cup (750g) bottled tomato pasta sauce
  • 2 cup (500ml) water
  • 50 gram baby spinach leaves
  • 1/2 cup (120g) firm ricotta cheese, crumbled

    Heat oil in large shallow flameproof dish; cook onion and garlic, stirring, until onion softens.

    Break lasagne sheets into bite-sized pieces. Sprinkle pasta pieces, chicken and half the pizza cheese into the dish.

    Pour combined pasta sauce and the water over top of chicken mixture. Simmer, covered, about 20 minutes or until pasta is tender; season to taste.

    Meanwhile, preheat grill.

    Sprinkle bake with spinach, ricotta and remaining pizza cheese; grill about 5 minutes or until cheese melts. Stand, covered, 10 minutes before serving, sprinkled with extra baby spinach leves.


You need to buy half a large barbecued chicken (450g) for this recipe.
