Chicken and prosciutto bites
  • 6 chicken tenderloins, flattened, halved lengthways
  • 3 slices prosciutto, halved lengthways
  • 12 basil leaves, plus extra to garnish
  • 6 sun-dried tomatoes, halved
  • 12 toothpicks
  • 2 tablespoon oil prepared aioli, to serve (see note)


Chicken and prosciutto bites

    Place tenderloins on a board. Top with prosciutto, basil leaf and sun-dried tomato half. Roll up tightly and secure with a toothpick.

    Heat oil in a frying pan or char-grill on medium. Cook chicken bites for 8-10 minutes, turning occasionally, until golden and cooked. Garnish with basil, serve with aioli.


Make your own aioli by mixing roasted garlic flesh into whole egg mayonnaise with a squeeze of lemon juice. If preferred, simply brown the outside and finish in a moderate oven, 180°C, to cook through.
