Ingredients: 1 1/2 tablespoon cider vinegar; 1/2 cup (125ml) olive oil; 1 teaspoon freshly ground black pepper; 4 medium (600g) ripe peaches; 50 gram baby spinach leaves; 50 gram wild rocket leaves; 1 1/2 cup (240g) roast chicken meat, shredded; 1 (130g) lebanese cucumber, coarsely chopped

Ingredients

1 1/2 tablespoon cider vinegar

1/2 cup (125ml) olive oil

1 teaspoon freshly ground black pepper

4 medium (600g) ripe peaches

50 gram baby spinach leaves

50 gram wild rocket leaves

1 1/2 cup (240g) roast chicken meat, shredded

1 (130g) lebanese cucumber, coarsely chopped

Method

1.In a large bowl, combine vinegar, olive oil and pepper. Slice peaches and add them to pepper dressing. Toss lightly to coat peaches.

2.Arrange the spinach and rocket leaves on a serving platter. Add the chicken, cucumber and dressed peaches. Season with a little sea salt and serve.
