Method

1.In a large bowl, combine vinegar, olive oil and pepper. Slice peaches and add them to pepper dressing. Toss lightly to coat peaches.
2.Arrange the spinach and rocket leaves on a serving platter. Add the chicken, cucumber and dressed peaches. Season with a little sea salt and serve.
