Chicken and cucumber salad
- 150 gram chicken breast fillet, sliced thinly
- 1 clove garlic, crushed
- 1 tablespoon lemon juice
- 1 teaspoon fresh oregano, finely chopped
- 1/4 teaspoon sweet paprika
- 2 slice (120g) wholemeal lavash bread
- cooking-oil spray
- 1 (400g) telegraph cucumber, halved lengthways, sliced thinly
- 1 large_piece (350g) green capsicum, sliced thinly
- 4 medium_piece (300g) egg tomatoes, seeded, sliced thinly
- 1 tablespoon fresh dill, coarsely chopped
- 1 tablespoon fresh oregano, coarsely chopped
- 1/4 cup (60ml) white wine vinegar
- 2 teaspoon white sugar
Method
Chicken and cucumber salad
- 1Combine chicken, garlic, juice, oregano and paprika in medium bowl.
- 2Meanwhile, preheat grill. Toast bread, both sides, break bread into large pieces.
- 3Make cucumber salad. Combine ingredients in large bowl and toss gently.
- 4Spray heated medium frying pan with cooking-oil spray, cook chicken in pan until cooked through.
- 5Add chicken and bread to cucumber salad, toss gently. Serve immediately.
