Ingredients

Chicken and cucumber salad
  • 150 gram chicken breast fillet, sliced thinly
  • 1 clove garlic, crushed
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh oregano, finely chopped
  • 1/4 teaspoon sweet paprika
  • 2 slice (120g) wholemeal lavash bread
  • cooking-oil spray
  • 1 (400g) telegraph cucumber, halved lengthways, sliced thinly
  • 1 large_piece (350g) green capsicum, sliced thinly
  • 4 medium_piece (300g) egg tomatoes, seeded, sliced thinly
  • 1 tablespoon fresh dill, coarsely chopped
  • 1 tablespoon fresh oregano, coarsely chopped
  • 1/4 cup (60ml) white wine vinegar
  • 2 teaspoon white sugar

Method

    Combine chicken, garlic, juice, oregano and paprika in medium bowl.

    Meanwhile, preheat grill. Toast bread, both sides, break bread into large pieces.

    Make cucumber salad. Combine ingredients in large bowl and toss gently.

    Spray heated medium frying pan with cooking-oil spray, cook chicken in pan until cooked through.

    Add chicken and bread to cucumber salad, toss gently. Serve immediately.
