Cherries in vodka

Enjoy this cheeky adult's only fruit dish on it's own with ice-cream or cream, or drizzled atop a slice of cake. These beautiful vodka soaked cherries last indefinitely and make a perfect Christmas gift.

Method

1.Place clean, unchipped jar or jars lying down in a large pan. Cover completely with warm water. Bring to the boil and boil, covered, for 20 minutes. Carefully remove the jars from the water (using tongs and rubber gloves) and drain well; stand upright on a wooden board. The heat from the jars will evaporate any water remaining in the jars. Or use the rinse cycle and the hottest temperature in the dishwasher without adding dishwasher powder.
2.Layer cherries and sugar in the jars. Pour enough vodka over cherries to cover them completely. Replace the lids tightly.
3.Stand in a cool dark place for at least 6 weeks before using. Invert jars occasionally to help dissolve the sugar.
4.The cherries can be served with cream or ice-cream and the vodka can be used in mixed drinks or cocktails.

The cherries will last indefinitely. Do not allow metal lids to touch the liquid; use plastic or glass instead. This recipe is best made 4 to 6 weeks ahead of serving.
