Method

1.Heat a large baking dish in a 200°C (180°C fan-forced) preheated oven for 10 minutes. Scrub potatoes under cold water then cut into 1cm slices. Pat slices dry with paper towel. Place potato slices, olive oil and Italian herbs in a large bowl and mix with clean hands until well combined.
2.Remove heated baking dish from oven and add potato slices in a single layer, return dish to oven and bake at 200°C (180°C fan-forced) for 15 minutes. Remove dish from oven, turn potato slices and return to oven for a further 10 minutes or until potato is tender.
3.Slice tomatoes into 1cm slices. Cut cheese slices into quarters. Working on an oven tray, layer potato slices, tomato slices, cheese slices and shaved ham to make small stacks. Bake in 200°C (180°C fan-forced) oven for 10-15 minutes until cheese is melted.

Stacks can be prepared several hours ahead. Cover and refrigerate on an oven tray. Uncover and bake as required.
