Method

1.Process corn chips and cheese blend until coarsely chopped. Combine refried beans and spice mix in a small bowl.
2.Spray a 4-hole (2-tablespoon) sausage roll maker with oil.
3.Fill each hole with ¼ cup corn chip mixture. Press mixture firmly with the back of a spoon into the base and side of each hole.
4.Turn machine on. Close lid; cook for 5 minutes. Lift the lid; using the back of a spoon, press down again to create a recess. Spoon 21/2 tablespoons bean mixture into each hole. Close lid; cook for a further 5 minutes or until base is brown and beans are hot. Transfer to a wire rack. Turn machine off for 5 minutes to cool slightly.
5.Repeat steps 2, 3 and 4 with remaining corn chip and bean mixtures.
6.Serve nacho boats topped with avocado, sour cream, chilli, coriander and lime wedges. Sprinkle with salt flakes, if you like.

Grated mexican-inspired cheese is a packaged blend of smoky chipotle cheddar and tasty cheese; it is available from most large supermarkets. You can just use cheddar, if you prefer.
