Cheese and bacon loaf

Golden, fluffy and packed full of crispy bacon pieces, this delicious cheesy loaf is perfect served sliced and enjoyed as a snack for afternoon tea or as a light lunch.

Ingredients

Method

1.Preheat oven to 200°C (180°C fan-forced). Grease and line a 19 x 9cm (base measurement) loaf pan, extending paper at long sides for handles.
2.Heat a small frying pan over moderate heat. Add bacon. Cook, stirring, 3-4 minutes or until crisp.
3.Finely chop 80g of the cheese; coarsely grate remaining cheese.
4.Sift flour into a large bowl. Add bacon, chopped cheese, egg and sour cream; mix well. Spoon into prepared pan; smooth surface. Sprinkle top with grated cheese. Bake 25-30 minutes, until risen and golden. Remove from oven. Turn out onto a wire rack to cool. Serve.

You could use pizza cheese instead of tasty.
