Char-grilled zucchini salad

green olive dressing
  • 2 tablespoon finely chopped pitted green olives
  • 2 anchovy fillets, drained, finely chopped
  • 2 teaspoon finely grated lemon rind
  • 2 teaspoon finely grated orange rind
  • 1 tablespoon baby capers, rinsed, drained
  • 2 (50g) shallots, finely chopped
  • 1/4 cup (60ml) red wine vinegar
  • 1/2 cup (125ml) extra virgin olive oil

  • 8 (750g) zucchini, thinly sliced lengthways
  • 2 tablespoon extra virgin olive oil

    Make green olive dressing, combine ingredients in a small bowl. Season to taste.

    Toss zucchini with oil, and season.

    Cook zucchini on a heated barbecue (or grill or grill pan) for 1 minute each side or until lightly charred and just tender. Place zucchini on a platter; serve drizzled with dressing.


Use a mandoline or V-slicer to slice zucchini, if available.
