Ingredients
green olive dressing
- 2 tablespoon finely chopped pitted green olives
- 2 anchovy fillets, drained, finely chopped
- 2 teaspoon finely grated lemon rind
- 2 teaspoon finely grated orange rind
- 1 tablespoon baby capers, rinsed, drained
- 2 (50g) shallots, finely chopped
- 1/4 cup (60ml) red wine vinegar
- 1/2 cup (125ml) extra virgin olive oil
Char-grilled zucchini salad
- 8 (750g) zucchini, thinly sliced lengthways
- 2 tablespoon extra virgin olive oil
Method
Char-grilled zucchini salad
- 1Make green olive dressing, combine ingredients in a small bowl. Season to taste.
- 2Toss zucchini with oil, and season.
- 3Cook zucchini on a heated barbecue (or grill or grill pan) for 1 minute each side or until lightly charred and just tender. Place zucchini on a platter; serve drizzled with dressing.
Notes
Use a mandoline or V-slicer to slice zucchini, if available.
