Dressing

Method

1.In a medium bowl, combine fish, mirin and tamarind.
2.Meanwhile, in a large saucepan of boiling water, cook noodles according to packet instructions, or until just tender; drain. Rinse under cold water; drain.
3.On a heated oiled grill plate (or grill or barbecue), cook tuna for about 3-5 minutes on each side, or until cooked as desired.
4.Meanwhile, to make dressing: place ingredients in a screw-top jar; shake well to combine.
5.In a medium bowl, place noodles and dressing with seeds and all but 1 tablespoon of the onion; toss gently to combine.
6.Divide noodles among serving plates; top with tuna, sprinkle with remaining onion.

Soba are Japanese buckwheat noodles and are great served hot or cold. They are available in selected supermarkets and Asian grocery stores.
