Char-grilled polenta and vegetables
  • 2 1/2 cup (625ml) vegetable stock
  • 1 cup (165g) polenta
  • 1/3 cup (35g) finely grated parmesan
  • 2 zucchini, sliced
  • 2 finger eggplants, sliced
  • 1 red capsicum, seeded, cut into 3cm-wide strips
  • 2 tablespoon olive oil
  • balsamic vinegar, to serve

    Line a 20cm round cake pan with foil.

    Bring stock to boil in a saucepan. Add polenta and reduce heat to low; cook 5 minutes, stirring, until soft and thickened. Mix in parmesan. Pour into prepared pan and smooth surface. Chill 30 minutes, until firm.

    Preheat a char-grill to medium. Brush vegetables with oil; char-grill 3-4 minutes each side, until tender. Set aside.

    Turn out polenta and cut into 8 wedges. Brush each side lightly with oil; char-grill 5 minutes each side, until crisp and golden.

    Drizzle vegetables lightly with balsamic vinegar and serve with polenta.
