Ingredients

Carrot sambal
  • 1 medium (170g) red onion, sliced thinly
  • 1 (130g) lebanese cucumber, seeded, grated coarsely
  • 1 large (180g) carrot, grated coarsely
  • 1 long green chilli, sliced thinly
  • 2 teaspoon finely grated fresh ginger
  • 1/4 cup (35g) crushed roasted peanuts
  • 1 tablespoon lemon juice

Method

Carrot sambal

    Combine onion, cucumber, carrot, chilli, ginger and nuts in a small bowl.

    Just before serving, stir in juice and season with salt.
