  • 1
Preheat oven to 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper.
  • 2
Sift combined flour, spice and soda into a large bowl. Stir in sugar, carrot, currants and pecans.
  • 3
In a jug, whisk eggs and oil together. Pour into dry ingredients. Mix lightly until combined. Pour mixture into pan, smoothing top.
  • 4
Bake for 20-25 minutes, until cooked when tested (see tip). Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
  • 5
Meanwhile, to make the ganache; in a small saucepan, heat cream until almost boiling. Remove from heat and add chocolate. Set aside for 1-2 minutes to melt. Stir until smooth.
  • 6
Spread ganache evenly over cooled slice. Chill until set. Cut into slices. Store in an airtight container.

Test slice by inserting a skewer into centre – if it comes out clean and dry, slice is cooked. Other signs slice is cooked are if it springs back after pressing lightly with a fingertip or shrinks from side of pan.
