Ingredients
Carrot and white chocolate slice
- 1 cup self-raising flour
- 1 teaspoon allspice
- 1/2 teaspoon bicarbonate of soda
- 3/4 cup brown sugar
- 1 large carrot, grated
- 1/2 cup currants
- 1/3 cup pecans, finely chopped
- 3 eggs, lightly beaten
- 2/3 cup olive oil
Ganache
- 1/2 cup cream
- 250 gram white chocolate, chopped
Method
Carrot and white chocolate slice
- 1Preheat oven to 180°C. Lightly grease and line a 20cm x 30cm slice pan with baking paper.
- 2Sift combined flour, spice and soda into a large bowl. Stir in sugar, carrot, currants and pecans.
- 3In a jug, whisk eggs and oil together. Pour into dry ingredients. Mix lightly until combined. Pour mixture into pan, smoothing top.
- 4Bake for 20-25 minutes, until cooked when tested (see tip). Cool in pan for 5 minutes before transferring to a wire rack to cool completely.
- 5Meanwhile, to make the ganache; in a small saucepan, heat cream until almost boiling. Remove from heat and add chocolate. Set aside for 1-2 minutes to melt. Stir until smooth.
- 6Spread ganache evenly over cooled slice. Chill until set. Cut into slices. Store in an airtight container.
Notes
Test slice by inserting a skewer into centre – if it comes out clean and dry, slice is cooked. Other signs slice is cooked are if it springs back after pressing lightly with a fingertip or shrinks from side of pan.
