Carrot and apple muffins
  • 1 3/4 cup self-raising flour
  • 125 gram unsalted butter, melted
  • 1/2 cup loosely packed brown sugar
  • 1 cup mixed dried sultanas and apricots, chopped
  • 2 eggs, lightly beaten
  • 2 tablespoon honey
  • 1 small carrot, finely grated
  • 1 small apple, unpeeled, finely grated
  • 3 teaspoon finely grated orange zest
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup pepitas
  • icing sugar, to dust

    Preheat oven to 180°C/160°C fan-forced. Line a 12-hole (1/3-cup) muffin tray with paper cases.

    Sift flour into a large bowl. Add butter, sugar, dried fruit, egg, honey, carrot, apple, zest and juice; stir until just combined (don't over-mix). Spoon into prepared holes; sprinkle with pepitas.

    Bake for 20-25 minutes or until a skewer inserted at centre comes out clean. Remove from oven. Stand in tray for 5 minutes. Transfer to a wire rack to cool. Serve dusted with icing sugar.


You can use any combination of dried fruit you like. Makes 12
