Caramel cornflake chews
- 125 gram butter
- 1/2 cup (110g) firmly packed brown sugar
- 1/4 cup (55g) caster sugar
- 1/2 cup (40g) desiccated coconut
- 3 cup (120g) cornflakes, crushed lightly
- 1 egg, beaten lightly
- 1/2 cup (70g) mixed nuts, finely chopped
Method
Caramel cornflake chews
- 1Preheat oven to 180°C (160°C fan-forced). Grease oven trays, line with baking paper.
- 2Melt butter in large saucepan, add sugars, cook, stirring, until combined. Remove from heat, stir in coconut, cornflakes, egg and nuts, stir gently until combined.
- 3Place level tablespoons of mixture about 3cm apart on oven trays.
- 4Bake about 15 minutes or until golden brown. Stand 5 minutes before removing from trays to cool on wire rack.
