Caramel banana pinwheels
- 1/2 cup (110g) firmly packed brown sugar
- 1 cup (150g) self-raising flour
- 1 cup (160g) wholemeal self-raising flour
- 30 gram butter
- 3 small ripe bananas (390g)
- 1/2 cup (125ml) low-fat milk
- 1/3 cup (35g) finely chopped walnuts
Method
Caramel banana pinwheels
- 1Preheat oven to 180°C (160°C fan-forced). Grease 20cm-round sandwich pan; sprinkle base of pan with 2 tablespoons of the sugar.
- 2Place flours and 1 tablespoon of the remaining sugar in medium bowl; rub in butter. Mash one of the bananas, add to bowl with milk; mix to a soft, sticky dough. Knead dough on floured surface; roll dough to 30cm x 40cm shape.
- 3Chop remaining bananas finely. Sprinkle remaining sugar over dough, top with nuts and extra banana.
- 4Starting from long side, roll dough tightly; trim ends. Cut roll into 10 slices; place pinwheels, cut-side up, in single layer, in pan.
- 5Bake pinwheels about 30 minutes. Serve warm.
