Capsicum and onion focaccia

Capsicum and onion focaccia
- 2 tablespoon vegetable or olive oil, plus 1/4 cup extra
- 2 medium red onions, thinly sliced
- 1 tablespoon brown sugar
- 1 small red capsicum, thinly sliced
- 1/2 teaspoon caster sugar
- 1 teaspoon salt
- 1 clove garlic, crushed
- 7 gram sachet (2 teaspoons) dried yeast
- 2 cup plain flour
- 3/4 cup warm water
- cooking oil spray
- 100 gram feta, crumbled
- 1/4 cup small basil leaves
Method
Capsicum and onion focaccia
- 1Preheat oven to 180°C (160°C fan-forced). Lightly grease a 30 x 20cm (base measurement) slice pan.
- 2Heat oil in a large frying pan over moderate heat. Add onion; cook, stirring, 8 minutes, or until soft. Add brown sugar and capsicum; cook, stirring, 8 minutes, or until cararnelised.
- 3Meanwhile, combine caster sugar, salt, garlic, yeast, flour, extra oil and warm water in a large bowl. Turn dough onto floured surface; knead 5 minutes, or until smooth. Press dough into prepared pan; spray with oil.
- 4Top dough with onion mixture and feta; bake 20-25 minutes, or until browned and cooked. Sprinkle with basil. Serve.
Notes
You could also use brown onion instead of red.
