Capsicum and onion focaccia

Capsicum and onion focaccia
  • 2 tablespoon vegetable or olive oil, plus 1/4 cup extra
  • 2 medium red onions, thinly sliced
  • 1 tablespoon brown sugar
  • 1 small red capsicum, thinly sliced
  • 1/2 teaspoon caster sugar
  • 1 teaspoon salt
  • 1 clove garlic, crushed
  • 7 gram sachet (2 teaspoons) dried yeast
  • 2 cup plain flour
  • 3/4 cup warm water
  • cooking oil spray
  • 100 gram feta, crumbled
  • 1/4 cup small basil leaves

    Preheat oven to 180°C (160°C fan-forced). Lightly grease a 30 x 20cm (base measurement) slice pan.

    Heat oil in a large frying pan over moderate heat. Add onion; cook, stirring, 8 minutes, or until soft. Add brown sugar and capsicum; cook, stirring, 8 minutes, or until cararnelised.

    Meanwhile, combine caster sugar, salt, garlic, yeast, flour, extra oil and warm water in a large bowl. Turn dough onto floured surface; knead 5 minutes, or until smooth. Press dough into prepared pan; spray with oil.

    Top dough with onion mixture and feta; bake 20-25 minutes, or until browned and cooked. Sprinkle with basil. Serve.


You could also use brown onion instead of red.
