Caprese chicken pasta salad

With cherry tomatoes, fresh homemade pesto and cherry bocconcini, our delicious summer pasta salad will be loved by the whole family. And, this versatile dish works just as well with cooked prawns, hot smoked salmon or canned tuna for a different meal any night of the week!

Ingredients

Caprese chicken pasta salad
  • 500 gram penne pasta
  • 2 cup basil leaves, plus extra to serve
  • 1/3 cup olive oil
  • 1/4 cup pine nuts
  • 1/4 cup parmesan, grated
  • 1 clove garlic, crushed
  • 1 barbecued chicken, skin, bones removed, meat shredded
  • 400 gram heirloom cherry tomatoes, halved
  • 200 gram tub cherry bocconcini, torn
  • lemon wedges, to serve

Method

Caprese chicken pasta salad

    In a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain. Set aside to cool.

    Meanwhile, in a food processor, pulse basil, oil, pine nuts, parmesan and garlic until smooth. Season to taste.

    In a large bowl, toss pasta, pesto, chicken, tomatoes and bocconcini.

    Serve topped with extra basil leaves and lemon wedges.

Notes

Replace shredded chicken with cooked prawns, hot smoked salmon or canned tuna.
