Ingredients

Cajun turkey burgers
  • 500 gram turkey mince
  • 2 tablespoon cajun seasoning
  • 3 green onions (green shallots), sliced finely
  • 2 teaspoon finely grated lemon zest
  • 1/2 cup (45g) instant rolled oats
  • 2 tablespoon lemon juice
  • 1 large tomato, chopped finely
  • 1 large ripe avocado, chopped finely
  • salt and freshly ground black pepper, to season
  • 4 crusty bread rolls, split in half, toasted
  • 50 gram salad leaves
  • peri peri or tabasco sauce, to serve

Method

Cajun turkey burgers

    In a medium bowl, combine mince, seasoning, green onion, lemon zest and oats; mix well. Shape into four patties and place on a plate. Cover, refrigerate 1 hour.

    Meanwhile, combine lemon juice, tomato and avocado in a bowl; season to taste with salt and pepper.

    Heat a flat barbecue plate over medium heat; coat with oil. Cook patties 3-4 minutes each side, or until cooked through.

    Sandwich the salad leaves, turkey patties, avocado salsa and sauce between rolls.

Suitable to freeze or microwave.
