1.Whisk buttermilk, egg, sugar, essence and butter in a large bowl. Add flour and cereal; stir to combine. Don’t overmix. Set aside 5 minutes to rest.
2.Spray a large non-stick frying pan lightly with oil. Place over moderate heat. Spoon tablespoons of batter into pan. Cook, in batches, 1-2 minutes each side or until golden and cooked. Serve warm with yoghurt and strawberry.
For best results, cook pikelets just before serving. Serve pikelets with sliced banana and maple syrup.
