Bubble and squeak
  • 2 cup shredded savoy cabbage
  • 1/2 quantity mashed potato
  • 4 finely chopped, green onions
  • plus extra to serve
  • 1/4 cup grated tasty cheese
  • 1 tablespoon wholegrain mustard
  • 50 gram butter
  • 1 tablespoon olive oil
  • crispy bacon, roasted cherry
  • tomatoes, wilted spinach,
  • fried egg, to serve

    Place cabbage in a bowl and cover with boiling water. Leave for 1 minute, then drain well.

    Transfer cabbage to a large bowl with potato, onions, cheese and mustard. Mix well. Season to taste. Divide mixture into eight patties.

    Heat butter and oil together in a large frying pan on medium. Fry patties in two batches, 2-3 minutes each side, until golden and crisp. Drain on paper towel.

    Serve patties with bacon, pan-fried tomatoes, spinach and egg. Top with extra green onions.
