Ingredients

Bruschetta with strawberry, banana and ricotta
  • 100 gram low-fat ricotta cheese
  • 1 tablespoon honey
  • 1/2 teaspoon finely grated orange rind
  • 1/4 teaspoon ground cinnamon
  • 125 gram strawberries, sliced thickly
  • 1 small banana (130g), sliced thinly
  • 2 teaspoon light brown sugar
  • 4 slice ciabatta bread (180g)

    Mix ricotta, honey, rind and cinnamon in small bowl until smooth.

    Combine strawberries, banana and sugar in small non-stick frying pan; stir gently over low heat until sugar dissolves.
