Brown sugar and orange-glazed carrots

The perfect side dish to any roast dinner, these gorgeous brown sugar and orange glazed carrots are wonderfully sweet and packed full of flavour. You'll have the whole family reaching for more!

Brown sugar and orange-glazed carrots
  • 1 kilogram mini carrots, peeled and trimmed (or standard carrots, sliced on diagonal)
  • 2 1/2 tablespoon butter
  • 2 tablespoon brown sugar
  • 1 orange, zest
  • 1 bunch flat-leaf parsley, chopped

    Cook carrots in boiling water until just tender (about 11 minutes for mini carrots, 4-6 minutes for sliced). Drain.

    Melt the butter in a large frying pan, add the drained carrots and fry over a high heat for 1 minute. Add the brown sugar and cook for a further 2-3 minutes, bubbling the sauce and stirring to thoroughly coat the carrots.

    Add orange zest and chopped parsley and swirl to coat the carrots. Serve warm in a heated dish.
