Broccolini with char siu pork and vermicelli noodles

You can pull together this meal in a flash, using ingredients you're likely to already have on hand, making it the perfect quick and midweek dinner idea. With healthy broccolini and carrot, it's great for getting your daily serve of veggies in, too.

Broccolini with char siu pork and vermicelli noodles
  • 500 gram pork scotch fillets, thinly sliced
  • 1/4 cup char siu
  • 2 bunch broccolini, roughly chopped
  • 200 gram vermicelli noodles
  • 1 carrot, peeled, julienne
  • 1/2 cup coriander leaves
  • 2 tablespoon chopped roasted peanuts

    In a large bowl, combine pork and char siu.

    In a wok or large frying pan, heat oil on high heat. Stir-fry pork in 2 batches, for 3-4 minutes each until cooked through. Transfer pork to a plate. Reserve cooking juices.

    In a large heatproof bowl, combine broccolini and noodles. Pour over enough boiling water to cover. Set aside for 5 minutes until noodles are tender. Drain well. Return to bowl.

    Add pork, carrot, coriander and peanuts to broccolini mixture. Drizzle over pan juices. Serve sprinkled with extra coriander and chilli.


If preferred, prepare this dish using sliced chicken thigh fillet. Sliced red capsicum would be a delicious addition to this dish.
