Broccolini with bacon and eggs
  • 700 gram broccolini, trimmed
  • 40 gram butter
  • 2 rindless bacon slices (130g), chopped coarsely
  • 2 thick slices ciabatta (70g), cut into 1cm pieces
  • 1 clove garlic, crushed
  • 1 tablespoon drained rinsed baby capers
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • 4 soft-boiled eggs, quartered

    Boil, steam or microwave broccolini until tender; drain.

    Meanwhile, melt butter in large frying pan; cook bacon until crisp. Add bread and garlic; cook, stirring, until bread is browned lightly. Add capers and parsley; stir until hot.

    Divide broccolini among serving plates; top with bacon mixture and egg.
