Broccolini, brown rice and sesame stir-fry

Chopped macadamias add crunch to this colourful, healthy stir-fry.

Broccolini, brown rice and sesame stir-fry
  • 2/3 cup (130g) brown long-grain rice
  • 350 gram (11 ounces) broccolini, trimmed
  • 3 clove garlic, crushed
  • 6 green onions (scallions), sliced thinly
  • 2 fresh long red chillies, sliced thinly
  • 1 medium red capsicum (bell pepper), sliced thinly
  • 2 teaspoon sesame oil
  • 2 tablespoon light soy sauce
  • 2 tablespoon water
  • 1/2 cup (70g) macadamias, chopped coarsely

    Boil, steam or microwave rice until tender; drain, cool.

    Cut broccolini stems in half lengthways, then in half crossways.

    Stir-fry garlic, onion, chilli and capsicum in heated oiled wok 1 minute. Add oil, broccolini and rice; stir-fry 1 minute. Add soy sauce and the water; stir-fry about 2 minutes or until broccolini is tender. Season to taste. Serve sprinkled with nuts.
