Ingredients

Broccoli and chilli stir-fry
  • 1 tablespoon rice bran oil
  • 6 piece ginger, julienned
  • 3 small red chillies, seeded, julienned
  • 2 medium broccoli, leaves intact, cut into florets
  • 1/4 cup water
  • 6 green onions (shallots), cut into 4 cm lengths, plus 1 extra, shredded
  • 1/3 cup (80ml) shaoxing wine (chinese rice wine) or dry sherry
  • 1/3 cup (80ml) soy sauce
  • 3 cup steamed rice (from 1 cup raw), to serve

Method

Broccoli and chilli stir-fry

    Heat rice bran oil in a wok on high. Stir-fry ginger and chilli for 30 seconds, until fragrant. Add broccoli and water, cover and cook 2-3 minutes, until broccoli is bright green.

    Add green onion, wine and soy sauce and stir-fry for 3 minutes, until broccoli is just tender. Divide between bowls and top with extra green onion. Serve with steamed rice.
