Brie and quince matchsticks

Sticky, gooey, sweet and astringent in all the right measures, these baked brie and quince matchsticks are made from light, flaky puff-pastry. Fabulous finger food for a party.

Brie and quince matchsticks
  • 1 sheet puff pastry
  • 250 gram (8-ounces) wedge brie cheese cut into 10 slices
  • 1 tablespoon fresh lemon thyme sprigs
  • 1/4 cup (60g) quince paste

    Preheat oven to 220°C (425°F). Oil oven tray.

    Cut pastry into ten 4.5cm x 12cm (1¾-inch x 4¾-inch) rectangles. Place pastry pieces on tray; pierce with fork.

    Bake pastries about 10 minutes. Top hot pastries with cheese, a lemon thyme sprig and a little quince paste.

    Serve matchsticks warm.
