Method
1.Preheat oven to 220°C (425°F). Oil oven tray.
2.Cut pastry into ten 4.5cm x 12cm (1¾-inch x 4¾-inch) rectangles. Place pastry pieces on tray; pierce with fork.
3.Bake pastries about 10 minutes. Top hot pastries with cheese, a lemon thyme sprig and a little quince paste.
4.Serve matchsticks warm.
