Brekkie burgers

These tasty brekkie burgers are so simple you can get the kids making you breakfast (maybe with a little help on a hot stove). The wholemeal bun filled with eggs, ham, avocado and tomato makes a healthy and tasty breakfast for all involved.


  • 1 small avocado
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 4 eggs
  • 4 wholemeal bread rolls
  • 1 large tomato
  • 4 slices smoked leg ham

    Cut into the avocado lengthways until you hit the seed, then run your knife around the seed. Twist the two halves apart. Using a spoon, remove the seed. Spoon out the avocado flesh into a small bowl. Add lemon juice to bowl and mash with a fork until avocado is chunky. Season with salt and pepper.

    Heat oil in a large non-stick frying pan over medium-high heat. One at a time, carefully crack eggs into the pan. Cook for 2 minutes or until whites are crisp and golden around the edges and yolks are still soft. Using a plastic egg flip, transfer eggs to a plate.

    Split bread rolls in half horizontally. Thinly slice tomato.

    Spread base of each roll with mashed avocado, then top with ham, tomato and a fried egg. Place bun lids on top and serve.
