Breakfast beans with bacon, sausages and eggs

Home made baked beans, with bacon, sausages and eggs really is the full monty when it comes to a great breakfast. Toast a couple of slices of good bread, brew a cup of your favourite joe and you're set for the day.

Ingredients

Breakfast beans with bacon, sausages and eggs
  • 1 tablespoon olive oil
  • 4 rindless bacon slices, coarsely chopped
  • 1 medium brown onion, coarsely chopped
  • 1 clove garlic, coarsely chopped
  • 2 400 gram cans diced tomatoes
  • 1 cup (250 millilitres) water
  • 1/4 cup (55 grams) brown sugar
  • 1 tablespoon worcestershire sauce
  • 2 teaspoon mustard powder
  • 2 400 gram cans butter beans, rinsed, drained
  • 12 chipolata sausages
  • 6 eggs

    In a frying pan, heat oil; cook bacon, onion and garlic, stirring, until onion softens. Add tomatoes, the water, sugar, sauce, mustard and beans; cook, covered, about 20 minutes.

    Meanwhile, cook sausages and eggs on oiled frying pan until sausages are cooked through and egg white has set.

    Serve beans with sausages and eggs.
