Bread sauce

Bread sauce is a classic English accompaniment to roast chicken or beef dishes.

Ingredients

Bread sauce
  • 175 gram ciabatta
  • 3 cloves
  • 1 small (80g) onion
  • 2 cup (500ml) milk
  • 2 bay leaves
  • 1 pinch ground allspice
  • salt and freshly ground white pepper

Method

    Trim the crust from the bread. Tear bread into pieces and process into crumbs.

    Press cloves into the onion.

    Heat milk gently in a small saucepan with onion, bay leaves and allspice. Simmer, uncovered, 5 minutes. Stand, covered, 10 minutes.

    Strain milk into a bowl, stir in breadcrumbs. Season to taste with salt and pepper.
