Blueberry and lemon friands
- 6 egg whites, at room temperature
- 150 gram butter, melted, cooled
- 1 1/4 cup icing sugar, plus 2 teaspoons extra
- 1 1/4 cup almond meal (ground almonds)
- 1/2 cup plain flour
- 1 teaspoon finely grated lemon zest
- 1 tablespoon lemon juice
- 150 gram frozen blueberries, thawed
Method
Blueberry and lemon friands
- 1Preheat oven to 200°C (180°C fan-forced). Grease a 12-hole (1/3-cup) oval friand pan.
- 2Whisk egg whites in a bowl with a fork until frothy. Add butter, sifted icing sugar, almond meal, flour, zest, juice and half the blueberries; stir until combined.
- 3Spoon mixture into prepared pan. Sprinkle tops with remaining blueberries. Bake for 20 minutes or until a skewer inserted at centre comes out clean. Stand in pan for 5 minutes.
- 4Transfer to a wire rack to cool completely. Dust with extra icing sugar. Serve.
