Blue cheese, apple & barbecued chicken slaw

Throw together this delicious dinner in just minutes with the help of a ready-made roast chook and the punchy flavour of blue cheese.

Ingredients

Blue cheese, apple & barbecued chicken slaw
  • 1/3 cup (45g) flaked almonds
  • 2 carrots
  • 1 green apple, peeled
  • 1/4 red cabbage, shredded finely
  • 3 cup shredded barbecued chicken
  • 1/3 cup chopped fresh chives
  • 100 gram gorgonzola dolce or other mild blue cheese, crumbled
  • 2 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1/4 teaspoon caster sugar (superfine sugar)

Method

    Make dressing. Whisk ingredients together in a small bowl; season to taste.

    Place nuts in a dry small frying pan over low heat, tossing frequently, for 2 minutes or until golden. Transfer to a large bowl.

    Cut carrots and unpeeled apple into matchstick-sized pieces.

    Add carrot and apple to large bowl with cabbage, chicken, chives and cheese; toss gently to combine.

    Transfer slaw to a platter, drizzle with dressing; season with freshly ground black pepper.

Notes

You will need a barbecued chicken weighing about 900g (1¾ pounds).
