Blue cheese and pear bruschetta

Blue cheese and pear are a match made in heaven - pop them on some crispy bread and you have a speedy and elegant starter!

Blue cheese and pear bruschetta
  • 1/2 baguette, sliced diagonally
  • 100 gram gorgonzola, crumbled
  • 1 beurre bosc pear, cored, finely chopped
  • 4 chopped pitted dates
  • 30 gram baby rocket
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar

    Preheat grill on high. Line an oven tray with foil.

    Arrange bread on tray. Spray with oil. Toast 2-3 minutes each side or until golden and crisp. Sprinkle with gorgonzola. Grill until melted.

    In a bowl, combine all remaining ingredients. Season. Top toasts with a little salad and serve with remaining salad on the side.
