BLT on mini toasts
  • 4 bacon rashers (280g)
  • 1 packet (80g) mini toasts
  • 6 butter lettuce leaves
  • 1/4 cup whole-egg mayonnaise
  • 200 gram grape tomatoes, halved

    Remove rind from bacon; cut each rasher into pieces slightly smaller than mini toasts. In a large frying pan, cook bacon, stirring, until browned and crisp. Drain on paper towels.

    Cut lettuce into pieces slightly larger than mini toasts.

    Divide mayonnaise among mini toasts; top each with lettuce, bacon and tomato.

    Serve at room temperature.
