These deliciously sweet apricot balls are easy to make and a perfect lunch box snack or on-the-go energy hit.

Method

1.Process cashews and almond kernels until fine. Add dates, dried apricots, white chia seeds, linseeds (flaxseeds) and water; process until well combined.
2.Roll level tablespoons of mixture into balls. Roll balls lightly in coconut to coat; place on a baking-paper-lined oven tray. Refrigerate for 1 hour. Transfer to an airtight container; store in the fridge for up to 1 month.

Suitable to freeze. Not suitable to microwave.
