Apricot bliss balls

These deliciously sweet apricot balls are easy to make and a perfect lunch box snack or on-the-go energy hit.

Ingredients

  • 2/3 cup (100g) raw cashews
  • 1/2 cup (80g) almond kernels
  • 140 grams (4½ ounces) chopped fresh medjool dates
  • 3/4 cup (100g) chopped dried apricots
  • 2 tablespoons white chia seeds
  • 1 tablespoon linseeds (flaxseeds)
  • 2 tablespoons water
  • 2 tablespoons (12g) desiccated coconut

Method

    Process cashews and almond kernels until fine. Add dates, dried apricots, white chia seeds, linseeds (flaxseeds) and water; process until well combined.

    Roll level tablespoons of mixture into balls. Roll balls lightly in coconut to coat; place on a baking-paper-lined oven tray. Refrigerate for 1 hour. Transfer to an airtight container; store in the fridge for up to 1 month.

Notes

Suitable to freeze. Not suitable to microwave.
