Berry tiramisu sundaes

Even diet watchers will find this scrummy berry sundae deliciously low on guilt!

Berry tiramisu sundaes
  • 100 gram frozen mixed berries
  • 2 tablespoon icing sugar mixture
  • 80 gram extra-light cream cheese
  • 80 gram low-fat fresh ricotta
  • 3 teaspoon skim milk
  • 1/2 teaspoon vanilla essence
  • 3 sponge finger biscuits (savoiardi), roughly chopped

    Place 2 tablespoons of mixed berries into a bowl; reserve. Place remaining berries in a small saucepan with half the icing sugar; cook and stir for 2 minutes or until icing sugar dissolves. Cool.

    Using an electric mixer, beat cream cheese, ricotta, milk, essence and remaining icing sugar in a bowl until creamy.

    Layer berry syrup, sponge finger biscuits and ricotta cream in 2 x 11/2-cup serving glasses. Serve topped with reserved berries.
