Method

1.Place 1 cup (250ml) of the juice in a microwave-safe dish. Use a fork to stir in the gelatine. Microwave the gelatine mixture on high (100%) for about 30 seconds or until dissolved. (Alternatively, stand the bowl in a pan of simmering water until dissolved). Cool slightly. Stir gelatine mixture into remaining juice.
2.Divide juice mixture among six 1/2-cup (125ml) jelly moulds. Place on a tray, cover, refrigerate for four hours or until set.
3.Sprinkle the nectarines with the sugar and toss gently to combine.
4.To serve, dip jelly moulds, one at a time, into a bowl of hot water for a few seconds. Run a small spatula between the jelly and the mould to create an air pocket. Turn mould onto a serving plate and hold plate and mould together while giving a sharp shake to loosen the jelly. Serve with nectarines.

The jelly can be made up to two days ahead of serving.
