Berry and coconut chia pudding

Packed full of protein, chia seeds are the healthier way to satisfy your sweet tooth.

Berry and coconut chia pudding
  • 2 1/2 cups (625ml) coconut milk
  • 1/3 cup (55g) white chia seeds
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or pure maple syrup
  • 1 medium (200g) banana, chopped coarsely
  • 1 tablespoon finely grated orange rind
  • 3 cups (300g) mixed berries

    Place coconut milk, seed, extract and honey in a large bowl; cover, refrigerate for 1 hour or overnight until thick.

    Blend or process coconut milk mixture with banana, rind and 2 cups of the fruit.
    Spoon into 6 x ¾-cup (180ml) serving glasses; refrigerate for 30 minutes or until pudding has thickened. Top with remaining
    fruit to serve.
