Ingredients
3 cup plain flour, sifted
3 teaspoon baking powder ((omit if using self-raising flour)
1 teaspoon salt
1/3 cup grated parmesan
1/4 cup chopped parsley
1 tablespoon caster sugar
375 millilitre can of beer
1 teaspoon sesame seeds
butter, to serve
Method
1. Preheat oven to moderately hot, 190°C. Lightly grease an oven tray.
2. Sift flour, baking powder and salt together into a large bowl. Stir in parmesan, parsley and caster sugar.
3. Make a well in the centre of dry ingredients. Pour in beer. Using a bread-and-butter knife, mix quickly to a soft, sticky dough. Do not over-mix.
4. Turn onto a lightly floured surface. Knead lightly. Form into a round. Place on tray. Sprinkle with sesame seeds.
5. Bake for 35-40 minutes, or until it sounds hollow when tapped. Cool for at least 10 minutes before slicing. Serve warm with butter.
Before baking, use a floured knife to score the top of the dough to form six or eight segments.
