Beef, white bean and zucchini pizza
- cooking oil spray
- 2 teaspoon olive oil
- 375 gram beef mince
- 1 medium (120g) zucchini
- 400 gram can white beans, rinsed, drained
- 1 clove garlic, quartered
- 1 tablespoon lemon juice
- 2 large (30cm) pizza bases
- 2/3 cup (70g) pizza cheese
- 1/2 cup (140g) yoghurt
- 1 tablespoon finely chopped fresh mint
Method
Beef, white bean and zucchini pizza
- 1Preheat oven to very hot, 220°C (200°C fan-forced). Spray two oven trays with cooking oil.
- 2Heat oil in a medium frying pan. Add beef; cook, stirring, 6-7 minutes, or until browned.
- 3Meanwhile, using a vegetable peeler, cut zucchini lengthways into thin strips.
- 4Blend or process beans, garlic and juice until smooth; season to taste.
- 5Spread bean puree over pizza bases. Place bases on trays; top with beef, zucchini and cheese.
- 6Bake pizzas about 20 minutes, or until bases are crisp. Serve drizzled with combined yoghurt and mint.
