Beef, white bean and zucchini pizza

With a thin base and thin slices of zucchini, this is a crunchy pizza that combines simple yet stunning flavours for an easy and delicious meal.

Method

1.Preheat oven to very hot, 220&degC (200&degC fan-forced). Spray two oven trays with cooking oil.
2.Heat oil in a medium frying pan. Add beef; cook, stirring, 6-7 minutes, or until browned.
3.Meanwhile, using a vegetable peeler, cut zucchini lengthways into thin strips.
4.Blend or process beans, garlic and juice until smooth; season to taste.
5.Spread bean puree over pizza bases. Place bases on trays; top with beef, zucchini and cheese.
6.Bake pizzas about 20 minutes, or until bases are crisp. Serve drizzled with combined yoghurt and mint.
