Method

1.Boil or microwave potato until tender; drain. Mash potato, then stir in egg, chives and flour and cheese until well combined.
2.Shape tablespoons of mixture into patties; coat in breadcrumbs. Heat about a oil in a shallow frying pan; cook dumplings until browned lightly, drain well on absorbent paper.
3.Heat beef or vegetable soup and water in a large saucepan until hot (do not boil). Serve bowls of soup topped with potato dumplings.
