Ingredients

Beef and bean tacos
  • 80 gram beef mince
  • 1 clove garlic, crushed
  • 1/2 teaspoon chilli powder
  • 1/4 teaspoon ground cumin
  • 300 gram can kidney beans
  • 2 tablespoon tomato paste
  • 1/2 cup water
  • 2 tomatoes, 1 medium, coarsely chopped, 1 small, seeded, finely chopped
  • 4 taco shells
  • 1/2 lebanese cucumber, seeded, finely chopped
  • 1/2 small_piece red onion
  • 1 teaspoon mild chilli sauce
  • 2 cup shredded iceberg lettuce

Method

    In a large frying pan, heat oil on high. Cook mince and garlic, stirring until mince is browned.

    Add chilli powder, cumin, kidney beans, tomato paste, water and chopped tomato; simmer, covered, about 15 minutes or until thickened.

    Heat 4 taco shells according to packet instructions. Seed and finely chop ½ lebanese cucumber and remaining tomato. In a small bowl, combine with red onion and chilli sauce.

    Divide mince mixture, lettuce and cucumber mixture between taco shells.
