Beef and bean tacos
- 80 gram beef mince
- 1 clove garlic, crushed
- 1/2 teaspoon chilli powder
- 1/4 teaspoon ground cumin
- 300 gram can kidney beans
- 2 tablespoon tomato paste
- 1/2 cup water
- 2 tomatoes, 1 medium, coarsely chopped, 1 small, seeded, finely chopped
- 4 taco shells
- 1/2 lebanese cucumber, seeded, finely chopped
- 1/2 small_piece red onion
- 1 teaspoon mild chilli sauce
- 2 cup shredded iceberg lettuce
Method
Beef and bean tacos
- 1In a large frying pan, heat oil on high. Cook mince and garlic, stirring until mince is browned.
- 2Add chilli powder, cumin, kidney beans, tomato paste, water and chopped tomato; simmer, covered, about 15 minutes or until thickened.
- 3Heat 4 taco shells according to packet instructions. Seed and finely chop ½ lebanese cucumber and remaining tomato. In a small bowl, combine with red onion and chilli sauce.
- 4Divide mince mixture, lettuce and cucumber mixture between taco shells.
