  • 340 gram packet buttercake mix
  • blue colouring
  • yellow jelly beans
  • chocolate freckles
  • black glossy decorating gel
Buttercream
  • 200 gram butter, room temperature
  • 250 gram icing sugar

    Preheat moderate oven (180°C/200°C fan-forced). Line 12-hole (1/3 cup/80ml) muffin pan with paper patty cases. Make cake according to directions on packet. Pour ¼ cup of mixture into each hole; bake apx 20 minutes. Stand cakes in pan for 5 minutes; turn onto wire rack to cool.

    To make buttercream; cream butter and icing sugar until light and fluffy. Tint with blue colouring; spread over patty cakes. Position yellow jellybeans on cakes for bodies; position freckles for wings. Position trimmed jelly beans for antennae. Using black decorating gel, dot eyes on butterflies.
