1.Boil, steam or microwave potato until tender; drain.
2.Meanwhile, make basil pesto.
3.Combine mayonnaise and pesto in large bowl; add onions and hot potato, mix gently.
4.Serve salad topped with combined basil and zest.

5.Process basil, cheese, nuts and garlic until chopped finely. With motor operating, gradually add oil in a thin, steady stream; process until almost smooth.
